Kitchens and back-of-house
Commercial kitchens have heat, steam and cleaning requirements. The drawings and the health department requirements usually set the wall finish, and the framing has to support it. Confirm moisture-resistant board or other wall panels where specified.
- Wall finish required in prep and dish areas
- Backing for shelving, equipment and wall-mounted fixtures
- Coordination with hood and exhaust enclosures
- Rated walls between kitchen and dining where required
Dining room and front-of-house
Dining areas often have feature walls, soffits, slat details and lighting that show surface flaws. Ask which walls need a Level 5 finish and what the lighting will be.
Ceilings
Some restaurants use open ceilings in the dining room and finished ceilings in restrooms and kitchens. Confirm which areas get drywall, which get grid and which stay open.
Schedule
Restaurant openings are date-driven. Inspections, equipment delivery and finish trades all depend on framing and drywall finishing on time. Early coordination keeps the critical path clear.
